Eric Henderson is a seasoned packaging executive with over 20 years of experience leading packaging innovation, sustainability, and development initiatives within the consumer packaged goods (CPG) industry. As Director of Global Packaging Innovation at PepsiCo, he oversees a team of 21 engineers responsible for packaging sustainability, innovation, productivity, brand maintenance, and quality across PepsiCo’s $20 billion portfolio, including Frito-Lay, Quaker Foods North America, and Gatorade. Throughout his career at PepsiCo, he has held leadership roles across multiple divisions, including Quaker North America, Frito-Lay, and Global Nutrition, driving strategic packaging solutions, cost optimization, and compliance with evolving regulations. He has spearheaded multi-million-dollar packaging innovations and sustainability roadmaps, helping PepsiCo advance its global environmental goals. Prior to PepsiCo, he worked at Mars and The Coca-Cola Company, where he contributed to packaging development for brands such as Skittles and Starburst. He holds a Bachelor of Arts in Packaging Science from Michigan State University.
